Classic Picadillo

Ingredients

  • 4 cloves garlic
  • 2 limes, for juice
  • 2 tablespoons olive oil
  • 8 oz trinity mix (diced fresh onions, bell peppers, and celery)
  • 1 1/2 lb lean ground beef (7% fat)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 (15 oz) can no-salt-added tomato sauce
  • 1/2 cup sliced, stuffed green olives
  • 1/4 cup golden raisins
  • 1 tablespoon capers

Steps

  1. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Chop garlic; juice limes (2 tablespoons). Place oil in pan, then add trinity mix; cook 4–5 minutes, stirring occasionally, until onions are tender and beginning to brown. Stir in garlic; cook 1–2 minutes until garlic is fragrant.
  2. Add beef, oregano, paprika, salt, and pepper; cook 6–8 minutes, stirring to crumble, until no pink remains and beef is 160°F. Reduce heat to low; stir in tomato sauce, lime juice, olives, raisins, and capers. Cover and simmer 20–25 minutes until sauce has thickened. Serve.
