Simple Cocadas (Coconut Macaroons)

Ingredients

  • Parchment paper
  • 2 limes, for juice
  • 6 ½ cups unsweetened shredded coconut
  • ½ cup all-purpose flour
  • ½ teaspoon ground cloves
  • ½ teaspoon kosher salt
  • 1 (14 oz) can sweetened condensed milk
  • 1 teaspoon vanilla extract

Steps

  1. Preheat oven to 350°F. Line baking sheet with parchment. Juice limes (2 tablespoons).
  2. Combine in large bowl: coconut, flour, cloves, and salt. Add condensed milk, lime juice, and vanilla; stir until well coated.
  3. Scoop (or form) into 28 (1-inch) balls and arrange on baking sheet. Bake 15–17 minutes until golden. Let stand on baking sheet until completely cool; serve.
