Minty Lime-Berry Fruit Salad

  • 4 limes, for zest/juice
  • ½ oz fresh mint
  • 1 lb fresh watermelon chunks
  • ½ cup tart apple slices
  • ½ teaspoon rum extract
  • ¼ cup powdered sugar
  • ½ teaspoon kosher salt
  • 4 cups mixed fresh berries (such as blackberries, blueberries, and raspberries)
  • ⅓ cup toasted coconut chips


  1. Zest 1 lime (1 teaspoon), then juice all 4 (1/4 cup). Chop mint finely (1/4 cup). Cut watermelon and apples into bite-size pieces. Whisk lime zest and juice, rum extract, powdered sugar, and salt until sugar has dissolved.
  2. Place watermelon, apples, berries, and mint in serving bowl. Add lime mixture and toss gently to coat. Cover and chill until ready to serve. Top with coconut just before serving.
