Looking for a little crunch? These super-simple tostadas can please even the pickiest of eaters.

Ingredients

  • 1 lb fully cooked pork roast (or butt)
  • 1 (15-oz) can black beans, drained and rinsed
  • 6 tostada shells
  • ¾ cup crema (or sour cream)
  • 1 teaspoon chipotle pepper sauce (+ more if desired)
  • 1 ½ cups shredded lettuce
  • 1 cup fresh diced tomatoes
  • ½ cup salsa verde
  • 1 cup queso fresco

Steps

  1. Preheat oven to 350°F. Microwave pork on HIGH for 2–3 minutes or until hot. Drain and rinse beans. Shred pork with 2 forks.
  2. Arrange shells on baking sheet. Stir together crema and chipotle sauce in small bowl. Spread 2 tablespoons chipotle crema dip in center of each shell; top with even amounts beans and pork. Bake 5–7 minutes until tostadas are crispy.
  3. Top tostadas with lettuce, tomatoes, salsa, and queso fresco. Serve.
