Shrimp and Garlic-Cilantro Sauce

Ingredients
- 2 limes, for juice
- ½ cup fresh cilantro
- ¼ cup extra-virgin olive oil
- 4 cloves garlic
- 1 tablespoon red wine vinegar
- 1 teaspoon adobo seasoning
- ½ serrano pepper, seeds and membrane removed, coarsely chopped
- 1 green onion, coarsely chopped
- 1 lb peeled/deveined rock shrimp, tails removed (thawed, if needed)
- 3 tablespoons unsalted butter
- 2 teaspoons sazón seasoning
Steps
- Prepare sauce. Squeeze limes for juice (1/4 cup). Add to bowl of food processor: cilantro, oil, garlic, lime juice, vinegar, adobo, serrano pepper, and onion. Blend 1–2 minutes until completely smooth.
- Prepare shrimp. Preheat large sauté pan on medium for 2–3 minutes. Add shrimp, butter, and sazón to pan; cook 3–4 minutes, stirring occasionally, until shrimp are pink and opaque. Serve shrimp in Mofongo cups with garlic-cilantro sauce.
